Easy Zesty Lentil Soup



I tbsp olive oil
4 cloves garlic , finely chopped
I diced onion
2 celery stalks, finely sliced
2 carrots, finely sliced 
I cup brown lentils
5 cups water
1 can stewed tomatoes
salt and pepper to taste
1 tsp cumin
1/4 lemon juice
1 bunch spinach, washed and finely chopped   or
1 package frozen spinach, defrosted and chopped




In large saucepan with lid, heat oil on medium heat.
Add onion, celery, garlic, carrot.
Saute on medium heat for 10 minutes or until soft.
Rinse lentils, and to pan with water and bring to boil.
Reduce heat to simmer, covered for 1/2 hour , stirring occasionally.

Add tomatoes, cumin, salt, pepper, lemon juice, spinach.
Cover and simmer over lower heat. for 1/2 hour or 3/4 hour.

Serve topped with chopped parsley and nutritional yeast flakes***
Makes 6 servings.


***  a yummy (“cheesy” flavour) supply of B12 and protein
